Cucumbers will stay crisp for longer if kept out of 1 place

Many households automatically place cucumbers in the fridge after unpacking their shopping, but food storage experts say that habit could actually be causing the popular salad vegetable to spoil more quickly.

According to guidance from the University of California’s Postharvest Technology Center, cucumbers are sensitive to cold temperatures and can suffer what is known as “chilling injury” when stored in conditions that are too cold for extended periods.

The centre advises that cucumbers are best kept at temperatures between 10C and 12C, which is warmer than most domestic refrigerators.

Standard fridges are typically set at around 4C or 5C, meaning cucumbers can begin to deteriorate if left inside for too long.

Signs of chilling injury include soft spots, pitting, water-soaked areas and accelerated decay, all of which can leave cucumbers limp and less appetising.

Instead, experts recommend storing cucumbers at cool room temperature, away from direct sunlight and heat sources. A pantry, cupboard or cool area of the kitchen is often considered a better option than the fridge, particularly if the cucumbers are likely to be eaten within a few days.

The advice may come as a surprise to many shoppers, as refrigeration is often viewed as the best way to extend the life of fresh produce.

However, not all fruit and vegetables respond well to cold conditions. Cucumbers are among a group of produce that originated in warmer climates and can be damaged by prolonged exposure to low temperatures.

Food storage specialists also advise keeping cucumbers away from fruits that produce high levels of ethylene gas, such as bananas, apples and tomatoes. Ethylene can speed up the ripening process and cause cucumbers to yellow and spoil more quickly.

For those who prefer to refrigerate cucumbers, experts suggest limiting the time they spend in the fridge and storing them towards the front of a shelf, where temperatures tend to be slightly warmer.

With food prices remaining a concern for many households, simple storage changes could help reduce waste and ensure vegetables stay fresher for longer.

The little-known cucumber tip is one of several food storage recommendations backed by researchers who say that understanding the needs of different fruits and vegetables can make a significant difference to their shelf life.
