Use turkey leftovers in best way with ‘cosy’ winter recipe
Turkey leftovers are bound to happen after the amount you cooked on Christmas Day, but don’t worry – you don’t have to be eating turkey sandwiches for the next few days. You can make something far cosier and more exciting.
“If you’re staring at your fridge with leftovers, you should make this cosy turkey pot pie,” @kalenainthekitchen said on TikTok.
She said it’s “creamy, comforting” and “so easy to throw together” when you cannot be bothered on Boxing Day. Because, let’s be honest, December 26 is for drinking more, eating more, and is basically an extended Christmas Day without the stresses. Plus, you can do everything “in one pan,” so whoever is washing up will be more than grateful.
Also, it’s worth noting it also works great with rotisserie chicken if you don’t have any Christmas Day leftovers.
First off, Kalena popped a large nob of butter into a pan and sauteed some vegetables. She had carrots, celery, and onions.
She then poured flour into the pan and added stock to thicken everything up. Next she added some frozen peas in, and then some cream for extra decadence.
Then, of course, the leftover turkey needs to be added, which is what will really make the dish sing.
“Top with puff pastry squares and then brush with an egg wash, and bake it until golden,” she shared.
When she pulled it out of the oven, it looked hearty, delicious, and when Kalena cut into it, it looked mouthwateringly good. Perfect to satisfy those comfort food cravings you’ll no doubt be having over the next few days.
Plus, there’s enough to serve a lot of people, so if you have guests coming around to yours, it’s a great, thrifty way to ensure you can give everyone a delightful meal.
In the comments, people said it was “officially cosy season” and they would be making this ASAP.
Someone wrote: “If you have leftover stuffing, add that on top instead, I promise it won’t disappoint.” “Cosy vibes and a golden crust? Yes, please,” another penned.
What are some other ways to use leftover turkey? You might consider making a hearty turkey curry, simmering the meat in a fragrant sauce with onions, garlic, ginger, and your favourite spices, then serving it with rice or naan. Another option is to prepare a comforting turkey soup or stew by simmering the turkey with vegetables, herbs, and perhaps some barley or pasta for extra substance.
If you’re in the mood for something lighter, try tossing the turkey into a crisp salad with seasonal greens, cranberries, nuts, and a tangy vinaigrette. Turkey also works beautifully in sandwiches – layer it with stuffing, cranberry sauce, and a little mayo between slices of good bread, or roll it up in a wrap with fresh veggies and a creamy dressing.
Also, consider using the turkey in tacos or enchiladas, accompanied by beans, cheese, and salsa, for a satisfying meal. Whatever you choose, the key is to pair the turkey with bold flavours and fresh ingredients to give it new life after the holiday feast.
